So we know how sweet potatoes are key component to any holiday dinner, form sweet potato pie to go with that turkey for Thanksgiving or that roasted sweet potato to serve with that honey glazed ham we all know and love!

Now down to business, what can yo never have too much of? Yep, you got it, cheeeeeeeeeeeesee!!! For my kick hiny recipe, I used Stella Aged Parmesan. So many uses, shaved, grated, melted, sliced. pair it with fruits, with pasta, in a burger, I could go on and on! In this occasion I used my Stella Aged Parm to top a Roasted Mushroom and Cheese Sweet Potato! Yum!!
ROASTED SWEET POTATO WITH MIXED MUSHROOMS AND PARMESAN CHEESE.
✓1 large sweet potato
✓1 chunk of Stella parmesan cheese
✓ Fresh Parsley
✓ Fist full of walnuts
✓ Seedless black grapes
✓ Olive oil
✓A dash of salt
We peel and slice the sweet potato in thick slices and scorch in a diamond pattern.
We place them in the oven, previously pre heated to 180 degrees and let cook for about 20 mins, using a toothpick or knife to stab the center to make sure its properly cooked when done. We also place the grapes in the oven, but remove them in ah=bout 10 mins and preserve hot.
In a pan, we take the mixed mushrooms and sautee them in olive oil until they reach a beautiful golden color.
We proceed to remove the sweet potato from the oven and grate some Stella parmesan cheese, top with the mushrooms, grapes and add some chunks that of that same Stella aged parmesan that is the key ingredient to give that savory touch that will enhance the rest of the flavor. Garnish with some fresh parsley and enjoy with a nice Glass of wine!
